For the aperitif, the Soissons bean!

You can already enjoy Soissons Bean as an appetizer. It exists cooked, marinated and seasoned! Garlic and fine herbs, harissa, Espelette pepper, colombo, piperade, southern, Provencal. There is something for every gourmet

the recipe for Soissoulet

here is the ingredient list for 4 people:

  • 100g onions
  • 2 cloves of garlic
  • 100g carrots
  • 4 duck legs
  • 200g smoked bacon
  • 4 Morteau sausages
  • 1 spoonful of tomato paste
  • 1 bouquet garni
  • Cloves
  • Salt, pepper,
  • A touch of saffron
  • 500g Soissons beans
  • Chapelure

Soak the beans in cold water for at least 12 hours, boil them in water for 2 to 3 minutes

Fry the pieces of meat in a buttered casserole dish. Set them aside and slice the fat. In this casserole, sweat the onion studded with cloves and the garlic very quickly. Put back the meat, the beans, the tomato paste, the carrots and the bouquet garni. Add 2 liters of water, salt and pepper

Cook for 1h30

At the end of cooking, add a pinch of saffron

Put in an earthenware terrine and cover with breadcrumbs, then bake in the oven at 240 degrees for 15/20 min.
